Serves: about 1 gallon ago
Preparation time: 20 minutes of active preparation
Total time: 4 weeks

Ingredients:

• 5 pounds of shredded cabbage
• 2 tablespoons sea salt or pickling salt
• 1 tablespoon caraway seeds

Instructions:

1. In a large bowl, cabbage with salt and caraway seeds mix. Let stand for 10 minutes.
2. Pack the cabbage mixture in a large glass bowl food. Top with an onion into quarters to fit inside the container, any load on it. Cover the bowl with a paper towel and secure with an elastic band.
