Sweetcorn Fritters Recipe


¾ cup flour
1 teaspoon baking powder
¼ teaspoon salt
pinch of black pepper
1 egg
1 can (440 g) cream tin sweetcorn
1-2 tablespoons of oil
2 teaspoons of parsley or oregano (chopped)


1. Put flour, baking powder, pepper and salt
in a container.
2. Add the egg and mix until smooth. If the mixture thickens add 2-3 tablespoons of milk PF to the mixture at the same fine.
3. Add the sweetcorn.
4. Heat the oil in a skillet.
5. Drop a tablespoon of corn mixture into the pan.
6. Cook until gets golden color and then turn it and cook the other side.
7. Serve with a salad and bread or potatoes.
